Im thinking of going into farming, but i want a small one (like large backyard size) with a niche market. Can you think of anything you really need for work or like to eat, but no one sells?

Are you in an area that likes meat and potatoes or do the people venture out a bit as food is concerned…..shallots are expensive and sometimes hard to find. Heirloom veggies are high in demand now as well, but if you’ve never gardened before, you may find some of the varities a bit difficult.
